Confession time. I have never had a corn dog. When Linda Holmes described the recipe from Iowa Girl Eats for mini corn dog muffins that she made on an episode of NPR’s Pop Culture Happy Hour podcast, I knew I had to give them a try. The hubby is delighted that we will likely have these on our menu for Super Bowl Sunday.

This year I won’t be watching the Super Bowl (unless the human whose lap I am sitting on is watching it). Though Animal Planet’s Puppy Bowl might have a halftime show featuring Fatso, the Keyboard Cat, I will be watching the Kitten Bowl on the Hallmark Channel. All of the kittens who play in this big game will be guaranteed forever homes by the North Shore Animal League America. That is a win-win.

Any Super Bowl party has so many different foods to choose from but a lot of times, there aren’t many healthy choices. These Healthy Whole Wheat Avocado Brownie Bites from Undressed Skeleton I think will satisfy that sweet tooth. I am looking forward to trying these!

The best way to describe my relationship to sports (except hockey at this point) can be summed up by saying I’m a fair-weather fan. If we’re in the playoffs, I’m watching. If we make it to the big game, I’m watching. One thing I’m never a fair-weather fan of, however, is the game day food. Wings, chips, snacks on snacks on snacks. The one dish I always find myself making is a very simple Lazy Taco Dip Recipe with three ingredients: cream cheese, salsa, and cheddar cheese. Grab a square glass baking pan and spread all that cream cheese at the bottom, nice and even. Then take the jar of salsa and cover the cream cheese. Once the salsa is poured, cover it all up with cheddar cheese, not too much, though. In the meantime, have the oven preheating to 350 and when ready, let it cook for ten minutes.
